“A coffee cupping is the technique that coffee buyers and roaster use to judge coffees. In some ways, it is a lot like a wine tasting, in that you slurp the coffee, spreading evenly across your tongue and then spit it out. However, rather than brewing the coffee in the traditional sense, it is steeped in small glasses. This not only brings out a wide variety of flavors, but helps to maintain consistency across different coffees. On Thursday, we will be sampling three coffees with distinct histories and trying to put names to the flavors that are exhibited by each.”
