I actually just thought this looked very cool. Clearly it’s some water valves but is this for the fire department? Does anyone know what’s up with all the different valves, do they just go to different sections of the building. I’m confused.

It’s a test header – used to test pressure of the the several components/floors of a sprinkler system or building fire pump.
